Tips
You can cook your bacon on the stove, but it is easier as well as tastier to do it in the oven
Use a splash of olive oil to raise the smoke point of butter which stops it from turning brown and burning while cooking
Make sure to season your chicken while cooking my philosophy is if every layer tastes good your dish will taste amazing
Don’t flip or move the chicken until you have achieved a golden-brown color on it which takes a couple of minutes
Make sure to let you chicken rest to keep it nice and juicy; if you cut too quickly all of the juicy will spill out onto the plate which looks cool but leaves you with dry chicken
It is ok if your chicken is not fully cooked during this part because later when we add it to the sauce and reduce it will finish cooking
Cook your roux after making for a couple of minutes this reduces the taste of the flour
Don’t forget to check on your bacon or you may be having to remake it (lol I do that sometimes); do not be tempted to use burnt bacon because you don’t want to remake it; back to my philosophy if every layer tastes good your dish will be amazing (burnt bacon does not taste good so don’t add it in lol)
It will take a few minutes for your roux to mix with the milk and become a sauce so don’t get discouraged if it doesn’t look good right away
If your sauce is too thick add some more milk; if it is too thin in another pan, make a thin roux and add it in a little at a time until you reach the desired thickness; a good sauce will coat the back of your spoon thinly
Adding bacon grease intensifies the flavor and makes it really good; however, you can skip it if you like (but seriously try it with the grease just once it won’t hurt)

1 box Rotini
5 cloves garlic
pepper (to taste)
1 cup Milk
1/2 stick of butter
2 tblsp flour
garlic salt (to taste)
Seasoning salt (to taste)
smoked paprika (to taste)
2 tblsp Ranch Seasoning
