Tips
Cook potatoes until they are tender to make them easier to mash; a good way to check if they are done is to stick a fork in them if it goes through easy and breaks apart, they are ready for mashing
Make sure to use a good amount of milk and heavy cream when mashing it may look too much but the starch will soak it all up and that is how you get creamy mashed potatoes
You can use only milk for this recipe, but I highly recommend using the heavy cream as well to add extra creaminess to the potatoes
When making a roux you want a thick paste of flour and butter
A roux is best for making gravy because it allows the flour to mix into the fat, so you don’t end up with clumps of flour in your gravy
When making the gravy it is better to make it too thick than too thin so add enough stock to let it come together as a gravy and then use more stock to thin it out if necessary
If your gravy is too thin, in another pan make another thin roux and add it in a little at a time to thicken it up
